In 2016, after more than a decade of dealing with chronic health issues, I received my diagnosis of Celiac Disease. It definitely rocked my world but changed my health for the better! I am so happy to have found answers to my problems and now I live symptom free! I started my 1:1 Gluten Free Consulting business in 2020 and have helped hundreds of people from all over the world learn the ropes as I teach them the most important parts of adjusting to a gluten free or Celiac lifestyle.
Traveling, holidays, social events, educating their families, even basic grocery needs and wants. The list of things you need to know is much more than just "eat a gluten free diet" which is what most doctors tell you after your diagnoses.
It's a lot to manage, mentally, emotionally and physically. Doing it alone is not the way to do it. Trust me. That's the route I took and it took me over 2 years to feel like I was getting the hang of it. I was getting sick ALL THE TIME!
In late 2021, I was diagnosed with Type 1 Diabetes. Another life rocking diagnosis. While I was in the hospital, a diabetes educated came to my room and taught me how to dose for insulin and count carbs. He, himself had T1D.
I thought to myself, this type of education doesn't happen for Celiac Disease but it's just as life rocking as Type One. It's food related and emotionally taxing to make that massive life change. Unless the dietitian or doctor you're seeing has Celiac or eats gluten free themselves, they cannot fully understand the toll it takes on you. They can't recommend good grocery swap that taste great and are worth the price. They can't prep you for all the work you're going to be putting in on your next vacation or how to navigate the holidays or work social events. They don't have that experience.
